1 head of cauliflower
1 bottle of franks hot sauce ( Or you can choose your favorite if you have one you prefer)
2 large scallions
4nlarge stalks of celery cut in half
1 cup of greek yogurt
½ cup of blue cheese crumbles
1 bunch fresh cilantro
Break apart the cauliflower head into individual florets. Coat with olive oil ( or cooking spray) salt and pepper. Roast on a cookie sheet pan at 400 for 15 minutes ( I also like to make mine in the air fryer at 350 for 10-15 minutes )
Take the cauliflower out of the oven and baste with hot sauce until all of the florets are covered completely. Place back into the oven or air fryer until golden brown and crispy.
Serve on a platter and garnish with scallions, and ½ of the blue cheese crumbles and/or cilantro. Serve with celery on the side.
Sauce: Mix the Greek yogurt with the other half of the blue cheese crumbles.
**TIP: For a more crispy texture, you can bread the cauliflower with a beer batter of seasoned flour and beer mixture and proceed to cook the same way.
